Garbage bread is a stuffed bread roll loaded with savory fillings—basically all your favorite “leftovers” rolled into pizza dough and baked until golden. It’s called “garbage” because you can throw in almost anything, not because it’s trash 😄

Here’s a classic, crowd-pleasing version:


Classic Garbage Bread

Ingredients

  • 1 lb pizza dough (store-bought or homemade)
  • 1 cup cooked ground beef or Italian sausage
  • ½ cup cooked bacon, chopped
  • 1 cup shredded mozzarella
  • ½ cup shredded cheddar
  • ½ cup sautéed onions and/or peppers
  • ¼ cup pizza sauce (plus more for dipping)
  • 1 tsp Italian seasoning
  • 1 egg (for egg wash)
  • Optional: pepperoni, mushrooms, jalapeños, garlic butter

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Roll out dough into a large rectangle (about 10×14 inches).
  3. Layer fillings down the center, leaving a 1–2 inch border around the edges.
  4. Add cheese & seasoning evenly over the fillings.
  5. Fold & seal: Fold in the short ends, then roll tightly like a log. Pinch seams closed and place seam-side down.
  6. Brush with egg wash and cut a few small slits on top for steam.
  7. Bake 20–25 minutes until golden brown.
  8. Rest 5–10 minutes, then slice and serve with warm sauce.
