Meatloaf with Ritz Crackers

Ingredients

  • 1½ lb ground beef (80/20 is best)
  • 1 sleeve Ritz crackers, crushed
  • 2 eggs
  • ½ cup milk
  • ½ cup finely chopped onion (or 1 tbsp onion powder)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce

Topping

  • ¾ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard (optional but very classic)

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, mix crackers, milk, eggs, onion, seasonings, and Worcestershire.
  3. Add ground beef and mix just until combined (don’t overmix or it’ll be dense).
  4. Shape into a loaf and place in a greased loaf pan or on a lined baking sheet.
  5. Mix topping ingredients and spread evenly over the loaf.
  6. Bake 60–70 minutes, until internal temp reaches 160°F.
  7. Let rest 10 minutes before slicing.

Tips for Next-Level Meatloaf

  • Add 2 tbsp melted butter for extra moisture
  • Swap half the beef for ground pork = insanely tender
  • Ritz crackers > breadcrumbs for that buttery softness
