  • 2 tablespoons pan drippings or butter
  • 2 tablespoons all-purpose flour
  • 1 cup (240 ml) chicken or pork broth

Instructions

1. Make the mashed potatoes

  1. Boil peeled, chopped potatoes in salted water until tender (15–20 minutes).
  2. Drain and mash with butter and milk until smooth. Season with salt and pepper.
  3. Keep warm while you cook the pork and make gravy.

2. Cook the pork chops

  1. Season pork chops with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil or butter in a large skillet over medium-high heat.
  3. Sear pork chops 4–5 minutes per side until golden brown and cooked through (internal temp 145°F / 63°C).
  4. Remove pork chops from the skillet and keep warm.

3. Make the gravy

  1. In the same skillet, leave 1–2 tablespoons of drippings or add butter.
  2. Sprinkle in the flour and whisk over medium heat for 1–2 minutes to make a roux.
  3. Gradually whisk in broth, scraping up browned bits from the pan.
  4. Simmer 3–5 minutes until thickened. Season with salt and pepper.

4. Serve

  • Plate the pork chops with a scoop of mashed potatoes.
  • Pour the gravy over the pork chops and potatoes.
