Ingredients (2–4 servings)

  • 4 pork chops (bone-in or boneless)
  • Salt and pepper, to taste
  • 2 tbsp olive oil or butter
  • 1 small onion, chopped (optional)
  • 8 oz (225 g) mushrooms, sliced
  • 1 can (10.5 oz / 295 g) cream of mushroom soup
  • ½ cup (120 ml) milk or cream
  • 1 tsp garlic powder or 2 cloves fresh garlic, minced
  • 1 tsp dried thyme or a few sprigs fresh
  • Optional: parsley for garnish

Instructions

1. Brown the pork chops:

  • Season chops with salt and pepper.
  • Heat oil or butter in a skillet over medium-high heat.
  • Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.

2. Cook the mushrooms and onion:

  • In the same skillet, sauté onion (if using) until soft.
  • Add mushrooms and cook until browned, 4–5 minutes.

3. Make the creamy sauce:

  • Lower heat to medium. Stir in cream of mushroom soup, milk, garlic, and thyme.
  • Mix until smooth and heated through.

4. Combine pork chops with sauce:

  • Return pork chops to the skillet. Spoon sauce over them.
  • Cover and simmer 10–15 minutes, until chops are fully cooked (internal temp 145°F / 63°C) and tender.

5. Serve:

  • Garnish with parsley.
  • Delicious over mashed potatoes, rice, or buttered noodles.
