Ah, yes—classic, fluffy pancakes 🥞✨. Perfect for breakfast, brunch, or anytime comfort food. Here’s a foolproof recipe.


Fluffy Pancakes

Ingredients (makes ~8 pancakes)

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1¼ cups milk
  • 1 large egg
  • 3 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional, but recommended)

Instructions

  1. Mix dry ingredients
    In a bowl, whisk together flour, baking powder, salt, and sugar.
  2. Mix wet ingredients
    In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine
    Pour wet into dry and stir until just combined. Lumps are okay—don’t overmix, or pancakes get tough.
  4. Cook
    Heat a nonstick pan or griddle over medium heat. Lightly butter the surface.
    Pour ~¼ cup batter per pancake. Cook until bubbles form on top (~2–3 min), then flip and cook another 1–2 min.
  5. Serve
    Stack, drizzle with syrup, add butter, fruit, or chocolate chips—go wild.

Tips for perfect pancakes

  • Extra fluffy: separate the egg, beat the white to soft peaks, and fold in gently
  • Keep warm: stack on a baking sheet in a 200°F oven
  • Variations: blueberries, chocolate chips, banana slices, cinnamon
