Chicken with Mashed Potatoes (Comfort-Style)
The Chicken (Pan-Seared + Gravy)
Ingredients
- 4 bone-in or boneless chicken thighs (breasts work too)
- Salt & black pepper
- 1 tsp paprika
- ½ tsp garlic powder
- 1 tbsp olive oil
- 2 tbsp butter
- 1 cup chicken broth
- Optional: splash of cream or milk
Instructions
- Pat chicken dry. Season both sides with salt, pepper, paprika, and garlic powder.
- Heat oil in a skillet over medium-high. Add chicken and sear 5–6 min per side until golden and cooked through. Remove and keep warm.
- Lower heat. Add butter to pan, then broth. Scrape up browned bits.
- Simmer 3–5 minutes to reduce slightly. Add a splash of cream if you like it richer.
- Return chicken to pan, spoon gravy over top.
The Mashed Potatoes (Creamy & Buttery)
Ingredients
- 2 lbs russet or Yukon gold potatoes, peeled & cubed
- Salt
- 4 tbsp butter
- ½–¾ cup warm milk or cream
- Black pepper
Instructions
- Boil potatoes in well-salted water until fork-tender (15–20 min). Drain.
- Mash with butter, then slowly add warm milk until creamy.
- Season with salt and pepper to taste.
How to Serve It
- Spoon gravy over chicken and potatoes (important)
- Add a simple veg: green beans, peas, or corn
- Finish with chopped parsley or cracked pepper
