🍲 Crock Pot Beef Stroganoff

Ingredients

  • 2 lbs beef stew meat or chuck, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt & black pepper
  • 1 tbsp olive oil (optional, for browning)

To finish

  • 1 cup sour cream
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Egg noodles or rice, cooked

Instructions

  1. (Optional but worth it) Brown the beef
    Quickly sear beef in a hot skillet with oil for extra flavor. Transfer to crock pot.
  2. Load the slow cooker
    Add onion, garlic, mushrooms, broth, Worcestershire, Dijon, paprika, salt, and pepper.
  3. Cook low & slow
    • LOW: 7–8 hours
    • HIGH: 4–5 hours
      Beef should be super tender.
  4. Thicken (if needed)
    Stir in cornstarch slurry during the last 20–30 minutes.
  5. Make it creamy
    Turn off heat and stir in sour cream at the end (prevents curdling).
  6. Serve
    Spoon over egg noodles or rice and enjoy the comfort 😌

🔥 Tips & Variations

  • Extra rich: add 2–3 tbsp cream cheese
  • No mushrooms? Totally fine.
  • Tangier flavor: splash of white wine at the start
  • Lighter version: use Greek yogurt instead of sour cream
