🍰 Golden Raisin Vanilla Cake Squares

Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 cup milk or buttermilk
  • 1½ tsp vanilla extract
  • ¾ cup golden raisins

(Optional: ½ tsp cinnamon or nutmeg for warmth)


Instructions

  1. Prep
    • Heat oven to 350°F (175°C)
    • Grease or line an 8×8 baking pan
    • Soak raisins in warm water 10 minutes, then drain (keeps them plump!)
  2. Mix dry ingredients
    Whisk flour, baking powder, baking soda, salt (and spice if using).
  3. Cream butter & sugar
    Beat until light and fluffy. Add eggs one at a time, then vanilla.
  4. Combine
    Alternate adding dry ingredients and milk to the batter. Mix just until smooth.
  5. Fold in raisins
    Gently stir in golden raisins.
  6. Bake
    Pour into pan and bake 30–35 minutes, until a toothpick comes out clean.
  7. Cool & slice
    Let cool, then cut into squares.

✨ Optional Finishes

  • Dust with powdered sugar
  • Drizzle with vanilla glaze
  • Serve warm with whipped cream or custard
