Slow Cooker Italian Potatoes

Ingredients

  • 2–3 lbs small potatoes (Yukon Gold or red potatoes work best)

Method

  2. Toss potatoes with Italian dressing, olive oil, garlic, herbs, salt & pepper in a bowl.
  3. Place in slow cooker and cook 4–5 hours on low or 2–3 hours on high, until tender.
  4. Optional: sprinkle with fresh parsley before serving.

Tips & Variations

  • For crispy edges, transfer cooked potatoes to a baking sheet and broil 3–5 min.
  • Add sliced onions, bell peppers, or mushrooms halfway through cooking for extra flavor.
