Instructions

  1. Prep chicken
    • Cut chicken into bite-sized pieces or leave whole to shred later.
    • Season lightly with salt and pepper.
  2. Sauté aromatics
    • In a large pot, heat olive oil over medium heat.
    • SautĂ© onion, carrots, and celery for 4–5 minutes until softened.
    • Add garlic, cumin, paprika, and turmeric; cook 30 seconds until fragrant.
  3. Simmer soup
    • Add chicken, lentils, and chicken broth.
    • Bring to a boil, then reduce heat to low and simmer 25–30 minutes, until lentils are tender.
  4. Shred chicken (if needed)
    • If chicken is whole, remove, shred, and return to the pot.
  5. Season & serve
    • Adjust salt and pepper.
    • Stir in parsley or cilantro.
    • Serve hot with crusty bread or rice.
