Classic Cinnamon Rolls

Makes: 10–12 rolls

Ingredients

Dough

  • 1 cup warm milk (110°F / warm, not hot)
  • 2¼ tsp active dry yeast (1 packet)
  • ½ cup sugar
  • ⅓ cup melted butter
  • 2 eggs, room temp
  • 1 tsp salt
  • 4–4½ cups all-purpose flour

Filling

  • ½ cup softened butter
  • ¾ cup brown sugar
  • 2 tbsp cinnamon

Cream Cheese Icing

  • 4 oz cream cheese, softened
  • ¼ cup butter, softened
  • 1½ cups powdered sugar
  • 1 tsp vanilla
  • 1–2 tbsp milk (as needed)

Instructions

1. Make the dough

  1. Mix warm milk, yeast, and 1 tbsp sugar. Let sit 5–10 minutes until foamy.
  2. Add remaining sugar, melted butter, eggs, and salt.
  3. Mix in flour gradually until a soft dough forms.
  4. Knead 6–8 minutes until smooth and elastic.

2. First rise

  • Place dough in greased bowl, cover, and let rise 1–1½ hours until doubled.

3. Fill & roll

  1. Roll dough into a rectangle (about 16×12 inches).
  2. Spread butter over dough.
  3. Mix brown sugar + cinnamon and sprinkle evenly.
  4. Roll tightly from the long side and cut into rolls.

4. Second rise

  • Place rolls in greased baking dish, cover, and rise 30–45 minutes.

5. Bake

  • Bake at 350°F (175°C) for 20–25 minutes until lightly golden.

6. Ice

  • Beat icing ingredients until smooth.
  • Spread over warm (not hot) rolls.
