🍮 Besan ki Meethi (Sweet Besan Delight)

Ingredients

  • 1 cup besan (gram flour)
  • ¾ cup ghee (clarified butter)
  • ¾–1 cup sugar (adjust sweetness)
  • ½ cup water
  • ½ tsp cardamom powder (elaichi)
  • Chopped nuts (almonds, pistachios; optional)

✨ Method

1) Prepare Sugar Syrup

  1. In a small pan, combine sugar + water.
  2. Heat until the sugar dissolves completely and becomes slightly sticky (one‑string consistency).
  3. Turn off heat and set aside.

2) Roast the Besan

  1. In a heavy pan, melt the ghee on low heat.
  2. Add the besan and roast gently.
  3. Keep stirring so it doesn’t burn.
  4. Roast until it turns golden and aromatic (about 10–12 min).

➡️ You’ll know it’s ready when the raw smell disappears and it looks glossy with ghee.


3) Combine & Cook

  1. Slowly pour in the warm sugar syrup into the roasted besan (be careful — it may splatter).
  2. Stir continuously so it all mixes well.
  3. Add cardamom powder and mix.

4) Finish & Serve

  1. When the mixture thickens and starts leaving the sides of the pan, add chopped nuts.
  2. Turn off the heat.
  3. Spoon into a greased plate or tray.
  4. Let it cool a bit, then cut into squares or diamonds.

🎯 Tips

  • Ghee amount: More ghee = richer, softer texture; less ghee = crumbly.
  • Sugar: Adjust to taste; you can also use jaggery syrup for a different flavor.
  • Nuts & Saffron: Add a few strands of saffron for extra aroma.
