Ingredients (serves 4–6)

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 (6 oz) box dry stuffing mix (any flavor, like herb or chicken)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 small onion, diced (optional)
  • 1–2 tsp garlic powder
  • Salt & pepper to taste
  • Optional: chopped celery or carrots for extra veggies

Instructions

  1. Prep the chicken:
    Season chicken lightly with salt, pepper, and garlic powder. Place in the bottom of the slow cooker.
  2. Mix the stuffing base:
    In a bowl, combine the dry stuffing mix, cream of chicken soup, chicken broth, milk, and optional onion/veggies. Stir until blended.
  3. Assemble in the slow cooker:
    Pour the stuffing mixture over the chicken, spreading evenly.
  4. Cook:
    • LOW for 6–7 hours, or
    • HIGH for 3–4 hours
      until chicken is cooked through (internal temp 165°F) and stuffing is fluffy.
  5. Serve:
    Gently scoop chicken and stuffing onto plates. Optional: sprinkle with fresh parsley for color.
