Creamy Slow Cooker Chicken (Cheesy Version)

Ingredients (serves 4)

  • 1½–2 lbs boneless, skinless chicken breasts or thighs
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream or half-and-half
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • Optional: 1 cup mushrooms or spinach for extra flavor/veggies
  • Optional: 2–3 slices cooked bacon, chopped

Instructions

  1. Prep the chicken
  • Season chicken with salt, pepper, and paprika.
  • Place in slow cooker.
  1. Add veggies & aromatics
  • Add onion, garlic, mushrooms/spinach, and optional bacon.
  • Sprinkle thyme or Italian seasoning on top.
  1. Add liquids & cheese
  • Pour chicken broth and heavy cream over chicken.
  • Scatter cream cheese cubes over the top.
  1. Cook
  • Low: 4–6 hours
  • High: 2–3 hours
  • Chicken should be tender and easy to shred with forks.
  1. Add shredded cheese
  • About 15 minutes before serving, stir in the shredded cheddar or mozzarella until melted and creamy.
  1. Serve
  • Over rice, pasta, mashed potatoes, or with crusty bread to soak up the sauce.

  • Boneless thighs stay juicier than breasts.
  • Don’t over-stir too early; let the sauce thicken naturally.
  • Add fresh parsley at the end for color and freshness.
