Creamy slow cooker chicken

Posted on February 5, 2026 by Admin

Ah yes 😏—creamy slow cooker chicken is one of the ultimate comfort meals: tender chicken in a rich, flavorful sauce that basically cooks itself. Here’s a foolproof version.

Creamy Slow Cooker Chicken

Ingredients (serves 4)

  • 1½–2 lbs boneless, skinless chicken breasts or thighs
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 4 oz cream cheese, cubed
  • 1 tsp dried thyme (or Italian seasoning)
  • 1 tsp paprika (optional, for color and flavor)
  • Salt & pepper to taste
  • 1–2 tbsp cornstarch (optional, for thickening)
  • Optional: 1 cup mushrooms or spinach for extra flavor/veggies

Instructions

  1. Prep chicken
  • Season chicken with salt, pepper, and paprika.
  • Place in slow cooker.
  1. Add aromatics
  • Add onion, garlic, and optional mushrooms/spinach on top.
  • Sprinkle thyme or Italian seasoning over everything.
  1. Add liquids
  • Pour in chicken broth, then scatter cream cheese cubes on top.
  • Pour heavy cream over everything.
  1. Cook
  • Low: 4–6 hours
  • High: 2–3 hours
  • Chicken should be tender and easy to shred with forks.
  1. Optional: Thicken sauce
  • Remove chicken, mix 1–2 tbsp cornstarch with 2 tbsp cold water, stir into sauce, and cook 5–10 minutes on high until thickened.
  1. Serve
  • Over rice, pasta, mashed potatoes, or even with crusty bread to soak up the sauce.

💡 Tips for Perfection

  • Boneless thighs stay juicier than breasts if you’re worried about dryness.
  • Add fresh parsley or grated Parmesan at the end for extra flavor.
  • Leftovers taste amazing the next day—sauce thickens even more overnight.

If you want, I can also give a “cheesy bacon creamy slow cooker chicken” version that turns this into a decadent, indulgent one-pot meal 😏.

Do you want me to do that?
