Ohhh yes 😍🍪 Speculoos (Cookie Butter) Cookies—soft, chewy, warmly spiced, and basically impossible to eat just one. These are rich without being heavy and taste like fall and holidays had a baby.


🍪 Speculoos Cookie Butter Cookies

Ingredients (makes ~18–20 cookies)

  • 1 cup Speculoos (Biscoff) cookie butter
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt

Instructions

  1. Preheat oven
    • 350°F / 175°C. Line baking sheets with parchment.
  2. Cream
    • Beat cookie butter, butter, and brown sugar until smooth and fluffy.
  3. Add wet ingredients
    • Mix in egg and vanilla until fully combined.
  4. Add dry ingredients
    • In a separate bowl, whisk flour, baking soda, and salt.
    • Gradually mix into wet ingredients until just combined.
  5. Scoop
    • Scoop 1½ tbsp dough, roll into balls.
    • Optional: roll in sugar or press with a fork for a crisscross pattern.
  6. Bake
    • Bake 9–11 minutes until edges are set but centers are soft.
  7. Cool
    • Let cool on pan 5 minutes, then transfer to a rack.

  • Soft centers: Pull them out while they still look slightly underbaked.
  • Extra flavor: Sprinkle a pinch of flaky sea salt on top.
  • Chill dough: 20–30 minutes if dough feels too soft.
