🌰🍯 Dates & Figs Nut Roll

Ingredients (makes 2 rolls)

  • 1 cup chopped dried dates
  • 1 cup chopped dried figs
  • 1 cup granulated sugar
  • ½ cup water
  • 1 tsp vanilla extract
  • 1½–2 cups chopped nuts (walnuts, pecans, or almonds)
  • Powdered sugar or shredded coconut (for rolling)

Instructions

  1. Cook the fruit
    • In a saucepan over medium heat, combine dates, figs, sugar, and water.
    • Stir constantly until mixture thickens and pulls away from the sides of the pan (about 8–10 minutes).
  2. Finish the mixture
    • Remove from heat and stir in vanilla.
    • Fold in chopped nuts until evenly distributed.
  3. Shape the rolls
    • Sprinkle powdered sugar or coconut on parchment paper.
    • Divide mixture in half.
    • Using slightly damp hands, shape each portion into a log.
  4. Coat
    • Roll logs in powdered sugar or coconut until fully coated.
  5. Chill
    • Wrap tightly and refrigerate at least 2 hours (overnight is even better).
  6. Slice & serve
    • Slice into ½-inch rounds. Serve with coffee or tea.
