Ingredients (serves 4–6)

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes (or one crushed + one diced)
  • 1 cup vegetable or chicken broth
  • 1 tsp sugar (optional, balances acidity)
  • ½ tsp dried basil or 1 tbsp fresh basil
  • ½ tsp dried oregano (optional)
  • Salt & black pepper to taste
  • Optional: ¼ cup heavy cream for creamy soup

Instructions

  1. Prep aromatics (optional sauté)
    • You can sauté onion and garlic in olive oil for 5 minutes before adding to the slow cooker for extra flavor—but it’s optional.
  2. Add ingredients to slow cooker
    • Add onions, garlic, tomatoes, broth, sugar, basil, oregano, salt, and pepper. Stir to combine.
  3. Cook
    • Cover and cook on low 6–8 hours or high 3–4 hours.
  4. Blend
    • Use an immersion blender directly in the slow cooker until smooth, or carefully transfer in batches to a blender.

    • Stir in heavy cream at the end for a creamy tomato soup. Heat for 5–10 minutes on low.
  6. Serve
    • Garnish with fresh basil, a drizzle of cream, or croutons. Perfect with grilled cheese or crusty bread.
