Baked Cottage Cheese Eggs

Ingredients (Serves 2–3)

  • 4 large eggs
  • ½ cup cottage cheese
  • ¼ cup milk
  • Salt & black pepper, to taste
  • ¼ tsp garlic powder (optional)
  • 2 tbsp shredded cheese (cheddar, mozzarella, or Parmesan, optional)
  • 1–2 tbsp chopped fresh herbs (chives, parsley, or dill, optional)
  • Non-stick cooking spray or butter (for greasing dish)

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Grease a small baking dish or ramekins.
  2. Mix the egg base
    • In a bowl, whisk eggs, cottage cheese, milk, salt, pepper, and garlic powder.
    • Mix until smooth and slightly frothy.
  3. Pour & top
    • Pour mixture into the prepared dish.
    • Sprinkle shredded cheese and herbs on top if using.
  4. Bake
    • Bake 25–30 minutes, until eggs are set and lightly golden on top.
    • A knife inserted in the center should come out clean.
  5. Serve
    • Slice and serve warm with toast, avocado, or fresh veggies.

  • Veggie-packed: add spinach, diced bell peppers, or mushrooms before baking.
  • Make-ahead: mix in a bowl, cover, and refrigerate overnight; bake in the morning (add a few extra minutes).
