Crockpot cheese tortellini and sausage

Oh yes 😄 This is an easy, cheesy, hearty crockpot meal—perfect for busy days!


Crockpot Cheese Tortellini and Sausage

Ingredients (Serves 4–6)

  • 1 lb (450 g) Italian sausage (mild or spicy), sliced or crumbled
  • 1 jar (24 oz) marinara sauce
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional, for heat)
  • 1 package (9–12 oz) frozen cheese tortellini (don’t thaw)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach or kale (optional)

Instructions

  1. Add ingredients to crockpot
    • Place sausage, marinara sauce, chicken broth, Italian seasoning, and red pepper flakes in the crockpot.
    • Stir to combine.
  2. Cook
    • Cover and cook on LOW 4–5 hours or HIGH 2–3 hours, until sausage is cooked through.
  3. Add tortellini
    • Stir in frozen tortellini.
    • Cover and cook 15–20 minutes on LOW or HIGH, until tortellini is tender.
  4. Add cheese & greens
    • Stir in mozzarella, Parmesan, and spinach (if using).
    • Cover for 5 minutes until cheese melts and greens are wilted.
  5. Serve
    • Taste and adjust seasoning.
    • Serve hot with extra Parmesan on top or garlic bread on the side.

Tips & Variations

  • Make it creamier: add ½ cup heavy cream or cream cheese with the tortellini.
  • Vegetable boost: add mushrooms, bell peppers, or zucchini.
  • Protein swap: use chicken sausage or ground turkey instead.
  • Spicy version: increase red pepper flakes or use spicy Italian sausage.
