Stuffed pepper soup

Stuffed Pepper Soup

Ingredients (Serves 4–6)

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 bell peppers (any color), diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional)
  • Salt & black pepper, to taste
  • ½ cup uncooked rice (or 1 cup cooked rice added at end)
  • 1–2 tsp Worcestershire sauce (optional, for depth)

Instructions

  1. Brown the meat
    • In a large pot, cook ground meat over medium heat until browned.
    • Drain excess fat.
  2. Sauté aromatics
    • Add onion and garlic, cook 3–4 minutes until softened.
  3. Add vegetables & liquids
    • Stir in diced bell peppers, diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, salt, pepper, and Worcestershire sauce.
    • Bring to a boil.
  4. Cook the rice
    • Add uncooked rice, reduce heat, and simmer 20–25 minutes, until rice is tender and peppers are soft.
    • If using pre-cooked rice, add in the last 5 minutes.
  5. Finish & serve
    • Taste and adjust seasoning.
    • Serve hot with crusty bread or sprinkle with shredded cheese if desired.

Tips

  • Vegetarian: skip meat, add extra beans or lentils.
  • Creamy version: stir in ¼ cup cream or cream cheese at the end.
  • Slow cooker option: Cook browned meat, peppers, onion, garlic, tomatoes, broth, and seasonings on LOW 6–7 hours. Add rice in the last 30 minutes.
  • Extra flavor: sauté bell peppers first to deepen the taste before adding liquids.
