Ingredients

  • 1 bunch asparagus, trimmed
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp paprika (optional)
  • Salt and pepper, to taste
  • 2 eggs
  • 2 tbsp flour
  • Cooking spray or oil for baking/frying

Instructions

  1. Preheat Oven (or Air Fryer)
    • Oven: Preheat to 425°F (220°C).
    • Air fryer: Preheat to 400°F (200°C).
  2. Prepare the Breading
    • In one bowl: flour with a pinch of salt and pepper.
    • In another bowl: beat the eggs.
    • In a third bowl: mix panko, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Bread the Asparagus
    • Dredge each asparagus spear in flour → dip in egg → coat with panko mixture.
  4. Cook
    • Oven: Place on a parchment-lined baking sheet, spray lightly with cooking spray. Bake 12–15 minutes until golden and crispy.
    • Air Fryer: Arrange in a single layer, cook 8–10 minutes, shaking halfway through.
  5. Serve
    • Serve hot with dipping sauce like ranch, aioli, or marinara.

  • Extra crunch: Mix panko with a little cornstarch before coating.
  • Spicy: Add cayenne or chili powder to the breadcrumb mixture.
  • Cheesy twist: Use sharp cheddar or Asiago instead of Parmesan.
