Slow cooker french onion meatloaf

Ohhh this one is cozy, savory, and ridiculously good 🤎
Here’s a Slow Cooker French Onion Meatloaf that comes out juicy with that deep, oniony flavor everyone loves.


Ingredients (serves 6)

Meatloaf

  • 2 lbs ground beef (80/20 works best)
  • 1 packet French onion soup mix
  • 1 cup breadcrumbs or crushed crackers
  • 2 eggs
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • ½ tsp black pepper

Onion Gravy

  • 2 cups sliced onions
  • 2 tbsp butter
  • 1 cup beef broth

Instructions

  1. Caramelize onions (optional but worth it):
    In a skillet, melt butter over medium heat. Add onions and cook 10–15 minutes until soft and golden.
    (You can skip this and use raw onions for a stronger flavor.)
  2. Mix meatloaf:
    In a large bowl, combine ground beef, soup mix, breadcrumbs, eggs, milk, Worcestershire, garlic powder, and pepper.
    Mix gently—don’t overwork it.
  3. Shape & set:
    Shape meat mixture into a loaf.
    Place onions in the bottom of the slow cooker and set the meatloaf on top.
  4. Add broth:
    Pour beef broth around (not over) the meatloaf.
  5. Cook:
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until internal temp reaches 160°F (71°C).
  6. Serve:
    Slice and spoon onion gravy over the top.

Tips for Best Results

  • For a firmer loaf, line the slow cooker with foil and lift it out to rest 10 minutes before slicing.
  • Want it richer? Stir 1–2 tbsp cornstarch mixed with water into the gravy and cook 15 minutes longer.
  • This is amazing with mashed potatoes or buttered egg noodles.
