Instructions:

  1. Preheat & prep:
    • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Make the cake batter:
    • Whisk flour, baking powder, and salt in a bowl.
    • In another bowl, cream butter and sugar until fluffy.
    • Beat in eggs one at a time, then vanilla and almond extract.
    • Alternately add dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
    • Gently fold in mashed blackberries.
  3. Bake:
    • Divide batter evenly between the pans.
    • Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean.
    • Cool in pans 10 minutes, then transfer to a wire rack to cool completely.
  4. Make the frosting:
    • Beat butter until smooth. Gradually add powdered sugar, milk/cream, and vanilla.
    • Fold in finely chopped lilac petals for a subtle floral flavor.
  5. Assemble:
    • Place one cake layer on a serving plate. Spread frosting on top, then place second layer.
    • Frost the top and sides of the cake. Decorate with blackberries and lilac petals.

  • Use fresh, unsprayed lilac petals to ensure they’re safe to eat.
  • Lightly dusting petals on top right before serving keeps the color and fragrance fresh.
