Gooey Peanut Butter Lava Cupcakes

Ingredients (6–8 cupcakes)

Cupcakes

  • ½ cup unsalted butter
  • 4 oz semi-sweet chocolate, chopped

  • Âź cup brown sugar
  • ½ tsp vanilla extract
  • Âź cup all-purpose flour
  • Pinch of salt

Peanut Butter Filling

  • Âź cup creamy peanut butter
  • 2 tsp powdered sugar (optional, to sweeten)

Instructions

1. Prep

  1. Preheat oven to 350°F (175°C).
  2. Grease a 6–8 cup muffin tin or line with cupcake liners.

2. Make the chocolate cupcake batter

  1. Melt butter and chocolate together (microwave in 20-second intervals or over a double boiler) until smooth. Let cool slightly.
  2. Whisk in eggs, granulated sugar, brown sugar, and vanilla until smooth.
  3. Gently fold in flour and salt until just combined.

3. Fill cupcakes

  1. Spoon about 2/3 of batter into each muffin cup.
  2. Make a small well in the center of each cupcake and place 1 tsp peanut butter inside.
  3. Cover with remaining batter.

4. Bake

  • Bake 12–15 minutes, until edges are set but centers are still soft.
  • Be careful not to overbake—you want the molten peanut butter center.

5. Serve

  • Let cupcakes cool 5 minutes, then carefully remove from tin.
  • Optional: dust with powdered sugar or drizzle with chocolate sauce.
  • Serve warm for the gooey lava effect!

  • Extra gooey: Use natural peanut butter for a runnier center.
