Glazed meatloaf

Oh yes 😄 Let’s make a classic glazed meatloaf—moist, flavorful, and topped with that sweet, tangy glaze everyone loves.


Glazed Meatloaf

Ingredients (6 servings)

Meatloaf

  • 1 ½ lbs ground beef (or mix beef and pork)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)

Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp Dijon mustard (optional for tang)

Instructions

1. Prep oven and pan

  1. Preheat oven to 350°F (175°C).
  2. Line a loaf pan with parchment paper or lightly grease.

2. Make the meatloaf

  1. In a large bowl, combine ground meat, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, salt, pepper, and thyme.
  2. Mix gently until just combined—don’t overmix, or it will be dense.
  3. Shape into a loaf and place in the prepared pan.

3. Make the glaze

  1. In a small bowl, mix ketchup, brown sugar, and Dijon mustard.
  2. Spread half of the glaze evenly over the top of the meatloaf.

4. Bake

  1. Bake for 50–60 minutes.
  2. Spread remaining glaze over the meatloaf for the last 10 minutes of baking.
  3. Check internal temperature: should reach 160°F (71°C).

5. Rest and serve

  • Let meatloaf rest 10 minutes before slicing—this helps it hold together.
  • Serve with mashed potatoes, roasted veggies, or your favorite sides.

Tips

  • Extra flavor: Add chopped bell pepper, grated carrot, or Parmesan to the meat mixture.
  • Make ahead: Form the loaf and refrigerate overnight; add glaze before baking.
  • Crispy edges: Bake on a wire rack inside the pan to let fat drain and edges crisp.
