Sausage, Sauerkraut & Potatoes

Ingredients (4 servings)

  • 1 lb smoked sausage or kielbasa, sliced into 1-inch pieces
  • 4–5 medium potatoes, peeled and diced (or leave skins on)
  • 1 medium onion, sliced
  • 2–3 cloves garlic, minced
  • 2 cups sauerkraut, drained (reserve a little juice if desired)
  • 1 tbsp olive oil or butter
  • ½ cup chicken broth (optional, for extra moisture)
  • 1 tsp caraway seeds (optional, traditional flavor)
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or mustard for serving

Instructions (Skillet Version)

1. Brown the sausage

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage slices and brown for 3–4 minutes per side. Remove and set aside.

2. Cook the vegetables

  1. In the same skillet, sauté onions and garlic until softened (3–4 minutes).
  2. Add diced potatoes and cook, stirring occasionally, 8–10 minutes, until starting to brown.

3. Combine everything

  1. Add sausage back to the skillet.
  2. Stir in sauerkraut and caraway seeds (if using).
  3. Add chicken broth if you like a little extra moisture.
  4. Cover and simmer 10–15 minutes until potatoes are tender and flavors meld.

4. Serve

  • Taste and adjust salt/pepper.
  • Garnish with parsley or serve with mustard on the side.

Crockpot Version (Dump-and-Go)

  1. Place sliced sausage, potatoes, onions, garlic, and sauerkraut in the crockpot.
  2. Add chicken broth (½ cup) and caraway seeds.
  3. Cook on LOW 6–7 hours or HIGH 3–4 hours until potatoes are tender.
  4. Stir gently before serving.

💡 Tips

  • For a little sweetness: add 1 apple, peeled and chopped.
  • Use smoked sausage or kielbasa for extra flavor.
  • Can also add a few chopped carrots for color and sweetness.
