🥕🍗 Slow Cooker Chicken Stew

⏱️ Time

  • Prep: 15 min
  • Cook: 6–7 hours (low) or 3–4 hours (high)

🛒 Ingredients

  • 1½–2 lbs chicken thighs or breasts, boneless or bone-in, cut into chunks
  • 4 medium carrots, sliced
  • 3 celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas (add last 30 min)
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp flour (optional, for thickening)
  • 2 tbsp butter or olive oil (optional, for thickening)

🔥 Instructions

  1. Place chicken, carrots, celery, potatoes, onion, and garlic in the slow cooker.
  2. Pour in chicken broth. Add thyme, rosemary, paprika, salt, and pepper. Stir to combine.
  3. Cover and cook:
    • Low: 6–7 hours
    • High: 3–4 hours
Until vegetables are tender and chicken is cooked through.
  4. Optional thickening:
    • In a small pan, melt butter and whisk in flour to make a roux. Stir into stew 15–20 min before serving and cook until thickened.
    • Or mix 2 tbsp flour with ¼ cup cold water and stir into stew for a lighter thickening.
  5. Add frozen peas during the last 30 minutes of cooking.
  6. Taste and adjust seasoning. Serve hot with crusty bread.

🌟 Variations & Tips

  • Herb swap: Use Italian seasoning or a bay leaf.
  • Creamy version: Stir in ½ cup cream or half-and-half before serving.
  • Extra veggies: Add parsnips, turnips, or green beans.
  • Instant flavor boost: Sauté onions and garlic before adding to slow cooker.

This is perfect for a cozy weeknight or for meal prep—flavors get even better the next day 😄

If you want, I can give a one-pot stove-top version that’s just as rich and flavorful.
