🛒 Ingredients
- 4 large russet potatoes
- 12 oz sausage (smoked sausage, kielbasa, or breakfast sausage)
- 1½ cups shredded cheese (cheddar, Colby-Jack, or pepper jack)
- 2 tbsp olive oil or butter
- Salt & pepper
- Optional toppings: sour cream, green onions, bacon bits, hot sauce
🔥 Instructions
- Preheat oven to 400°F (205°C).
- Scrub potatoes, pat dry, poke each a few times with a fork.
- Rub with olive oil, sprinkle with salt.
- Bake directly on oven rack (or on a sheet) for 50–60 minutes, until fork-tender.
- Meanwhile, slice sausage and brown it in a skillet over medium heat until heated through and lightly crispy.
- When potatoes are done, slice them open and fluff the insides with a fork.
- Add butter (if using), then top with sausage and shredded cheese.
