Mozzarella Chicken

Ingredients (serves 3–4)

  • 4 boneless, skinless chicken breasts
  • Salt & black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1½ cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese (optional but recommended)
  • Optional garnish: fresh basil or parsley

Instructions

1. Prep Chicken

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken dry and season both sides with salt, pepper, garlic powder, and Italian seasoning.

2. Sear Chicken

  1. Heat olive oil in a large oven-safe skillet over medium-high heat.
  2. Sear chicken 2–3 minutes per side until lightly golden (not fully cooked).

3. Add Sauce & Cheese

  1. Spoon marinara sauce over each chicken breast.
  2. Sprinkle mozzarella evenly on top.
  3. Add Parmesan if using.

4. Bake

  • Transfer skillet to oven (or move chicken to a baking dish).
  • Bake 20–25 minutes, until chicken reaches 165°F (74°C) and cheese is melted and bubbly.
  • Optional: broil 1–2 minutes for golden cheese.

5. Serve

  • Garnish with fresh basil or parsley.
  • Serve over pasta, rice, or with garlic bread and a salad.
