Classic Macaroni Salad

Ingredients (serves 4–6)

Pasta & Veggies

  • 2 cups elbow macaroni (uncooked)

  • ½ cup red bell pepper, diced
  • ½ cup red onion, finely chopped
  • 2 hard-boiled eggs, chopped (optional)
  • ½ cup shredded carrots (optional)

Dressing

  • ¾ cup mayonnaise

  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp sugar (optional)
  • Salt & pepper to taste

Optional Garnish

  • Paprika, fresh parsley, or chives

Instructions

1. Cook Pasta

  1. Cook macaroni according to package directions until al dente.
  2. Drain, rinse under cold water, and let cool completely.

2. Make Dressing

  • In a bowl, mix mayonnaise, mustard, vinegar, sugar, salt, and pepper until smooth.

3. Combine

  • In a large bowl, combine cooled macaroni, chopped veggies, and eggs.
  • Pour dressing over salad and mix gently until evenly coated.

4. Chill & Serve

  • Refrigerate at least 1 hour before serving to let flavors meld.
  • Garnish with paprika, parsley, or chives before serving.
