Baked Mozzarella Chicken

Ingredients (serves 2–4)

  • 2–4 boneless, skinless chicken breasts
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1–2 tbsp olive oil
  • 1 cup marinara sauce (or diced tomatoes with herbs)
  • 1 cup shredded mozzarella cheese
  • Optional: fresh basil leaves, Parmesan cheese

Instructions

1. Prep Chicken

  1. Preheat oven 375°F (190°C).
  2. Pat chicken dry. Season with salt, pepper, garlic powder, and Italian seasoning.

2. Sear Chicken

  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken 2–3 min per side until golden (it doesn’t need to be fully cooked).

3. Assemble

  • Place seared chicken in a baking dish.
  • Spoon marinara sauce over each piece.
  • Top with mozzarella cheese (and sprinkle Parmesan if using).

4. Bake

  • Bake 20–25 min until chicken is cooked through (internal temp 165°F / 74°C) and cheese is melted and bubbly.
  • Optional: broil 1–2 min for golden, slightly crispy cheese.

5. Serve

  • Garnish with fresh basil leaves.
  • Serve with pasta, rice, or a simple salad.

Pro Tips

  • Juicy chicken: Pound chicken to even thickness for consistent cooking.
  • Extra flavor: Add garlic slices or sun-dried tomatoes under the cheese.
  • Cheese options: Mozzarella + a little provolone or fontina = extra melty goodness.
  • Sauce twist: Use spicy arrabbiata or pesto for a flavor variation.
