Easy Taco Soup

Ingredients (serves 4–6)

  • 1 lb ground beef (or turkey/chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, ½ tsp paprika, salt & pepper)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) pinto beans, drained & rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles, undrained
  • 1 can (10 oz) tomato soup or 1 cup tomato sauce
  • 2 cups beef or chicken broth (adjust for thickness)
  • Optional: ½–1 cup shredded cheese, sour cream, tortilla chips, avocado, cilantro for serving

Instructions

1. Cook Meat

  1. In a large pot, cook onion + garlic until soft.
  2. Add ground meat, cook until browned. Drain excess fat.
  3. Stir in taco seasoning.

2. Add Soup Ingredients

  • Add beans, corn, diced tomatoes, tomato soup, and broth.
  • Stir to combine, bring to a boil.
  • Reduce heat and simmer 15–20 min for flavors to meld.

3. Serve

  • Ladle into bowls.
  • Top with shredded cheese, sour cream, tortilla chips, avocado, or cilantro.

Pro Tips

  • Extra spice: Add diced jalapeño or chili flakes.
  • Richer flavor: Brown meat with a little smoked paprika or cumin first.
  • Thicker soup: Mash some beans before adding or simmer longer.
