Ingredients (serves 2–4)

  • 2 large flour tortillas or wraps

  • ¼ cup cream cheese or mayonnaise (optional, for extra creaminess)
  • 2–3 green onions or chives, sliced (optional)
  • Salt & pepper, to taste
  • Optional: cooked bacon, diced bell peppers, or spinach

Instructions

1. Prepare the filling

  • In a bowl, mix chicken, shredded cheese, cream cheese/mayo, green onions, and any optional add-ins.
  • Season with salt and pepper.

2. Assemble the roll-ups

  • Lay a tortilla flat.
  • Spread the chicken and cheese mixture evenly over the tortilla, leaving about ½ inch at the edges.
  • Roll tightly from one edge to the other.

3. Cook (optional)

  • Skillet method: Heat a small amount of butter or oil over medium heat. Place the roll seam-side down and cook 2–3 minutes per side until golden and cheese melts.
  • Oven method: Preheat oven to 375°F (190°C). Place roll-ups seam-side down on a baking sheet and bake 10–12 minutes until warmed through and lightly golden.

4. Serve

  • Slice into pinwheels or serve whole.
  • Great with salsa, ranch, or a simple salad on the side.

Tips

  • Use pre-cooked chicken to save time. Rotisserie chicken works perfectly.
  • Don’t overfill or the roll-ups will be messy.
  • For extra flavor, sprinkle paprika or garlic powder on the filling.
  • Optional: melt cheese on top in the oven for a crispy cheesy crust.
