These taste like mini pecan pies baked into soft muffins—gooey in the middle, slightly crisp on top, and packed with toasted pecans.

🧂 Ingredients (12 muffins)

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ¾ cup brown sugar
  • ½ cup melted butter
  • 1 tsp vanilla extract
  • 1 ½ cups chopped pecans

🍳 Instructions

1. Preheat oven

Set to 175°C (350°F) and line a muffin tin.

2. Mix dry ingredients

In a bowl, combine:

  • flour
  • baking powder
  • salt

3. Mix wet ingredients

In another bowl whisk:

  • eggs
  • brown sugar
  • melted butter
  • vanilla

Mix until smooth.

4. Combine

  • Add dry ingredients into wet mixture
  • Stir until just combined
  • Fold in chopped pecans

5. Fill muffin cups

  • Spoon batter into muffin tray (about ¾ full)
  • Sprinkle a few extra pecans on top if you like

6. Bake

  • Bake 18–22 minutes
  • Tops should be golden and slightly crisp
  • Toothpick should come out mostly clean (a little gooey is fine)

🍽️ Serve with

  • Coffee or tea ☕
  • Vanilla ice cream 🍦
  • Warm caramel drizzle 🍯

🔥 Tips

  • Don’t overmix or muffins become dense
  • Brown sugar is key for that “pecan pie” flavor
  • Let them cool slightly—they firm up as they set
  • Add a pinch of cinnamon for extra warmth

If you want, I can also give you:

  • 🥧 Full pecan pie (not muffin version)
  • 🍫 Chocolate pecan pie muffins
  • 🧈 Butter pecan bakery-style muffins
  • 🥣 Low-sugar or keto pecan muffins
