Meatloaf and Potatoes Dinner

Ingredients (serves 4–6)

For the Meatloaf

  • 1 ½ lbs (680 g) ground beef (or beef + pork)

  • 2 cloves garlic, minced
  • 1 large egg

For the Meatloaf Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard

For the Potatoes

  • 2 lbs (900 g) potatoes (russet or Yukon gold), cut into chunks or wedges
  • 2–3 tbsp olive oil or melted butter
  • Salt and pepper, to taste
  • 1 tsp garlic powder or paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Meatloaf

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, soak breadcrumbs in milk for 2–3 minutes.
  3. Add ground beef, onion, garlic, egg, Worcestershire sauce, salt, pepper, and paprika. Mix gently until combined.
  4. Shape into a loaf on a parchment-lined baking sheet or in a loaf pan.
  5. Mix ketchup, brown sugar, and mustard, then spread half on top of the meatloaf.

2. Prepare the Potatoes

  1. Toss potato chunks with olive oil, salt, pepper, and optional spices.
  2. Arrange potatoes around the meatloaf on the same baking sheet if there’s space, or on a separate sheet.

3. Bake

  1. Bake meatloaf 50–60 minutes, brushing with remaining glaze halfway through.
  2. Roast potatoes 35–45 minutes, turning halfway, until golden and tender.
  3. Meatloaf is done when internal temperature reaches 160°F (71°C).

4. Serve

  • Let meatloaf rest 10 minutes before slicing.
  • Serve slices with roasted potatoes, garnish with parsley.

  • Juicy meatloaf: Don’t overmix the meat.
  • Crispy potatoes: Spread them in a single layer and turn halfway through baking.
  • Flavor boost: Roast the potatoes with a few sprigs of thyme or rosemary.
