Lemon bars are one of those desserts that look simple but hit the perfect balance of buttery, tangy, and sweet when done right. Here’s a classic, dependable version you can make at home.


🍋 Lemon Bars (Classic Recipe)

Ingredients

For the crust:

  • 1 cup (225 g) unsalted butter, softened
  • ½ cup sugar
  • 2 cups all-purpose flour
  • Pinch of salt

For the lemon filling:

  • 1 ½ cups sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • ½ cup fresh lemon juice (about 3–4 lemons)
  • 1 tbsp lemon zest

For topping:

  • Powdered sugar (for dusting)

Instructions

  1. Prep the pan
    Preheat oven to 175°C (350°F). Line a 9×13-inch pan with parchment paper.
  2. Make the crust
    Cream butter and sugar until smooth.
    Mix in flour and salt until a soft dough forms.
    Press evenly into the pan.
    Bake for 18–20 minutes until lightly golden.
  3. Prepare the filling
    Whisk sugar and flour together.
    Add eggs, lemon juice, and zest.
    Mix until smooth (don’t overbeat).
  4. Bake again
    Pour filling over the warm crust.
    Bake for 20–25 minutes until set in the center.
  5. Cool completely
    Let it cool at room temperature, then chill in the fridge for cleaner cuts.
  6. Finish & serve
    Dust with powdered sugar and slice into squares.

Tips for perfect lemon bars

  • Use fresh lemon juice—it makes a huge difference
  • Don’t overbake the filling; it should be just set
  • Chill before cutting for neat, sharp edges
  • A slightly firm crust helps support the soft top layer
