Ingredients

For the crust:

  • 1 ½ cups crushed graham crackers
  • ¼ cup sugar
  • ½ cup melted butter

For the cheesecake filling:

  • 2 packages (8 oz each) cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract

For the cherry swirl:

  • 1 cup cherry pie filling (store-bought or homemade)
  • Optional: blend slightly for smoother swirls

Instructions

  1. Prep the pan
    Preheat oven to 175°C (350°F). Line an 8×8-inch pan with parchment paper.
  2. Make the crust
    Mix graham cracker crumbs, sugar, and melted butter.
    Press firmly into the bottom of the pan.
    Bake for 8–10 minutes, then let it cool slightly.
  3. Prepare the filling
    Beat cream cheese until smooth.
    Add sugar, then eggs one at a time.
    Mix in vanilla extract until creamy and lump-free.
  4. Assemble
    Pour cheesecake batter over the crust.
    Drop spoonfuls of cherry filling on top.
    Use a knife or toothpick to gently swirl (don’t overmix).
  5. Bake
    Bake for 30–35 minutes, until the center is just set.
  6. Cool & chill
    Let cool at room temp, then refrigerate for at least 3 hours (overnight is better).
  7. Slice & serve
    Lift out using parchment, cut into bars, and enjoy.
