🥕🥦 Crispy Vegetable Fritters

Crispy vegetable fritters are a crunchy, savory snack made by coating mixed vegetables in a seasoned batter and frying them until golden. They’re great as a tea-time snack or appetizer.


🧾 Ingredients:

Vegetables:

  • 1 cup cabbage (finely shredded)
  • 1 small carrot (grated)
  • 1 small onion (thinly sliced)
  • 1 small potato (optional, grated)
  • 2–3 tbsp chopped coriander (cilantro)
  • 1–2 green chilies (optional, chopped)

Batter:

  • 1 cup gram flour (besan)
  • 2–3 tbsp cornflour or all-purpose flour (for extra crispiness)
  • ½ tsp turmeric
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • Water (as needed to make thick batter)

For frying:

  • Oil (for deep or shallow frying)

👩‍🍳 Instructions:

1. Prepare vegetables

  • Mix all chopped/grated vegetables in a bowl
  • Lightly squeeze out excess water (don’t make them dry)

2. Make batter

  • Add gram flour, cornflour, and spices
  • Pour in a little water gradually
  • Mix into a thick batter that coats vegetables well

3. Combine

  • Add vegetables into batter and mix thoroughly

4. Fry

  • Heat oil on medium flame
  • Drop spoonfuls of mixture into hot oil
  • Fry until golden and crispy on both sides

5. Drain

  • Remove and place on paper towels to absorb extra oil

🍽️ Serving Ideas:

  • With mint chutney 🌿
  • With ketchup or garlic mayo
  • As a side with tea or soup

🔥 Tips for extra crispiness:

  • Keep batter thick, not runny
  • Add a little rice flour for crunch
  • Fry on medium heat so they cook inside properly
  • Don’t overcrowd the pan

🌶️ Variations:

  • Add spinach or fenugreek leaves
  • Mix in boiled corn or peas
  • Make spicy with extra green chilies
  • Add cheese for a gooey center
