Cranberry Swirl Coffee Cake is a soft, buttery cake with a tangy cranberry ribbon—perfect with tea or coffee ☕🍰


🍒 Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • ½ cup butter (softened)
  • 1 cup milk
  • 2 eggs
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt

For Cranberry Swirl:

  • 1 cup cranberries (fresh or dried)
  • ¼ cup sugar
  • 1 tbsp water
  • 1 tsp lemon juice

Optional Crumb Topping:

  • ¼ cup flour
  • 2 tbsp butter
  • 2 tbsp brown sugar

🍳 Method

1. Make Cranberry Swirl

  • In a small pan, cook cranberries, sugar, water, and lemon juice.
  • Simmer until thick and jam-like. Let it cool.

2. Prepare Batter

  • Beat butter and sugar until light and fluffy.
  • Add eggs one at a time, then vanilla.
  • Mix in flour, baking powder, baking soda, and salt.
  • Add milk gradually to form a smooth batter.

3. Assemble

  • Pour half the batter into a greased pan.
  • Add cranberry mixture and swirl with a knife.
  • Pour remaining batter on top and lightly swirl again.
  • Add crumb topping if using.

4. Bake

  • Bake at 180°C (350°F) for 35–40 minutes.
  • Check with a toothpick—it should come out clean.

  • Serve warm with coffee or chai ☕
  • Dust with powdered sugar for a bakery-style look
