Ingredients

  • 1 tsp paprika (optional for color)
  • 1–2 tbsp olive oil
  • 1 cup chicken broth (or apple juice for sweetness)
  • 1 onion, sliced
  • 3–4 cloves garlic, smashed
  • Optional: fresh herbs (rosemary, thyme, sage)

Instructions

1️⃣ Season the pork

  • Pat the roast dry.
  • Rub with salt, pepper, garlic powder, onion powder, and paprika.

2️⃣ Optional sear

  • Heat oil in a skillet over medium-high.
  • Sear roast 2–3 minutes per side until browned (adds flavor but not required).

3️⃣ Slow cook

  • Place sliced onions and garlic in slow cooker.
  • Place pork on top.
  • Pour broth around (not over) roast.
  • Optional: tuck fresh herbs around the meat.
  • Cover and cook:
    • LOW: 8–10 hours
    • HIGH: 4–6 hours

4️⃣ Finish & serve

  • Remove pork and let rest 10 minutes.
  • Slice or shred.
  • Optional: thicken juices with 1–2 tsp cornstarch + water for gravy.

  • Apple cider twist: replace ½–1 cup broth with apple cider or apple juice for sweetness
