🥔 German Potato Pancakes (Kartoffelpuffer)

Ingredients

  • 4 large potatoes, peeled
  • 1 small onion
  • 2 eggs
  • 3–4 tbsp all-purpose flour
  • Salt & pepper, to taste
  • ¼ tsp nutmeg (optional, traditional in Germany)
  • Vegetable oil for frying
  • Optional toppings: applesauce, sour cream, smoked salmon, chives

Instructions

1️⃣ Grate potatoes and onion

  • Use a box grater or food processor.
  • Place in a clean kitchen towel and squeeze out excess liquid.

2️⃣ Mix the batter

  • In a bowl, combine grated potatoes and onion, eggs, flour, salt, pepper, and nutmeg.
  • The mixture should hold together but not be too stiff.

3️⃣ Fry pancakes

  • Heat 2–3 tbsp oil in a large skillet over medium-high heat.
  • Drop heaping tablespoons of the mixture into hot oil and flatten slightly.
  • Fry 3–4 minutes per side until golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.

4️⃣ Serve

  • Serve hot with applesauce or sour cream.

  • Crispier pancakes: fry in small batches, don’t overcrowd pan
