Crispy Roasted Potatoes

Ingredients:

  • 1.5 lbs (700 g) small potatoes, halved or quartered
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or thyme
  • Salt and pepper to taste

Instructions:

  1. Toss potatoes in olive oil, garlic, herbs, salt, and pepper.
  2. Spread on a baking sheet in a single layer.
  3. Roast at 425°F (220°C) for 30–40 min, turning halfway, until golden and crispy.

Garden Salad

Ingredients:

  • Mixed greens (lettuce, spinach, arugula)
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Carrot, shredded
  • Red onion, thinly sliced
  • Olive oil & balsamic vinegar (or your favorite dressing)
  • Salt and pepper

Instructions:

  1. Toss all vegetables in a large bowl.
  2. Drizzle with olive oil and vinegar just before serving. Season with salt and pepper.
