Chili con carne

Here’s a classic Chili Con Carne recipe — rich, spicy, and perfect for a cozy meal. This version works on the stovetop, in the slow cooker, or in the Instant Pot.


🌶 Ingredients (Serves 4–6)

  • 1 lb (450 g) ground beef (or a mix of beef and pork)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1–2 bell peppers, chopped
  • 1 can (14 oz / 400 g) diced tomatoes
  • 1 can (15 oz / 425 g) kidney beans, drained and rinsed
  • 2 tbsp tomato paste
  • 1 cup beef broth or stock
  • 1–2 tsp chili powder (adjust to taste)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne (optional, for heat)
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1–2 tbsp vegetable oil

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños


🥘 Instructions

1. Cook the meat

  1. Heat oil in a large pot over medium-high heat.
  2. Add ground beef and cook until browned. Drain excess fat if necessary.

2. Cook the vegetables

  1. Add onion, garlic, and bell peppers. Sauté for 4–5 minutes until softened.

3. Add spices and liquids

  1. Stir in chili powder, cumin, paprika, cayenne, oregano, and tomato paste. Cook 1–2 minutes to release aromas.
  2. Add diced tomatoes, beans, and beef broth. Stir to combine.

4. Simmer

  • Reduce heat to low, cover, and simmer for 30–45 minutes to let flavors meld.
  • For a thicker chili, simmer uncovered for the last 10–15 minutes.

5. Serve

  • Ladle into bowls and add toppings like cheese, sour cream, or cilantro.
  • Serve with rice, cornbread, or tortilla chips.

💡 Tips:

  • Slow cooker option: Brown the meat and sauté the veggies first, then add all ingredients to the slow cooker and cook on low 6–8 hours.
  • Instant Pot option: Sauté meat and veggies in the pot, then pressure cook on high for 15 minutes.
  • For extra depth, add 1–2 squares of dark chocolate or a splash of beer.
