Here’s a simple, hearty bean soup that you can adapt to whatever beans you’ve got.
🍲 Bean Soup (Easy & Cozy)
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 2 cans (15 oz each) beans (white, navy, pinto, or mixed), drained & rinsed
- 4–5 cups vegetable or chicken broth
- 1 can (14.5 oz) diced tomatoes (optional)
- 1 tsp salt (to taste)
- ½ tsp black pepper
- 1 tsp dried thyme or Italian seasoning
- Optional: bay leaf, smoked paprika, ham/bacon, spinach, parmesan rind
Instructions
1️⃣ Heat olive oil in a pot over medium heat.
2️⃣ Add onion, carrots, and celery; cook until soft (5 minutes).
3️⃣ Add garlic and cook 30 seconds.
4️⃣ Stir in beans, broth, tomatoes (if using), herbs, salt, pepper, and bay leaf.
5️⃣ Bring to a boil, then simmer 25–30 minutes.
6️⃣ Mash or blend part of the soup for creaminess.
7️⃣ Taste and adjust seasoning.
🔥 Variations
- Ham & bean: add diced ham or a ham bone
- Tuscan white bean: add rosemary + spinach
- Creamy bean: stir in cream or coconut milk
- Spicy: add chili flakes or hot sauce
- Slow cooker: cook everything on LOW 6–8 hours
