🍲 Tortellini Sausage Soup

Ingredients

  • 1 lb (450 g) Italian sausage (mild or spicy)
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 package (9–12 oz) cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach or kale
  • Salt & pepper, to taste
  • Optional topping: grated Parmesan

Instructions

1️⃣ Cook the sausage

  • In a large pot, brown sausage over medium heat.
  • Break it up as it cooks. Drain excess fat if needed.

2️⃣ Build the soup

  • Add onion and cook until softened (3–4 min).
  • Add garlic, Italian seasoning, and red pepper flakes; cook 30 sec.
  • Stir in diced tomatoes and chicken broth.
  • Bring to a simmer.

3️⃣ Add tortellini

  • Add tortellini and cook according to package directions (usually 3–5 minutes).

4️⃣ Finish

  • Stir in cream and spinach.
  • Simmer 2–3 minutes until greens are wilted.
  • Season with salt & pepper.

5️⃣ Serve

  • Top with Parmesan and serve hot.

🔥 Tips & Variations

  • Creamy or brothy: reduce cream to ½ cup for lighter soup
  • Tomato-forward: add 1–2 tbsp tomato paste
  • Slow cooker: cook everything except tortellini & cream on LOW 6 hrs, add those last 30 min
  • Make-ahead tip: cook tortellini separately so it doesn’t soak up broth
