Ingredients
- 1 lb (450 g) Italian sausage (mild or spicy)
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced

- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 package (9–12 oz) cheese tortellini (fresh or frozen)
- 2 cups fresh spinach or kale
- Salt & pepper, to taste
- Optional topping: grated Parmesan
Instructions
1️⃣ Cook the sausage
- In a large pot, brown sausage over medium heat.
- Break it up as it cooks. Drain excess fat if needed.
2️⃣ Build the soup
- Add onion and cook until softened (3–4 min).
- Add garlic, Italian seasoning, and red pepper flakes; cook 30 sec.
- Stir in diced tomatoes and chicken broth.
- Bring to a simmer.
3️⃣ Add tortellini
- Add tortellini and cook according to package directions (usually 3–5 minutes).
4️⃣ Finish
- Stir in cream and spinach.
