Instructions

1. Make the mashed potatoes

  1. Boil potatoes in salted water until tender (15–20 min).
  2. Drain and mash with butter, milk, salt, and pepper. Keep warm.

2. Caramelize the onions

  1. Heat butter and oil in a pan over medium-low heat.
  2. Add sliced onions and a pinch of salt.
  3. Cook slowly for 15–20 min, stirring occasionally, until golden brown. Add sugar if desired.
  4. Set aside, keeping warm.

3. Cook the ribeye steaks

  1. Pat steaks dry, season generously with salt and pepper.
  2. Heat oil in a heavy skillet over high heat.
  3. Add steaks and sear 3–4 min per side for medium-rare (adjust to preference).
  4. Add garlic and thyme/rosemary for flavor. Spoon pan juices over steaks.
  5. Rest steaks 5–10 min before slicing.
