Creamy mushroom and spinach lasagna

Here’s a rich, vegetarian-friendly Creamy Mushroom and Spinach Lasagna recipe — layers of tender noodles, earthy mushrooms, spinach, and creamy cheese sauce.


Ingredients (serves 6–8)

For the filling:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 500 g (1 lb) mushrooms, sliced
  • 4 cups fresh spinach (or frozen, thawed and drained)
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian herbs

For the cheese sauce:

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk (whole or 2%)
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg (optional)
  • Salt and pepper, to taste

Other ingredients:

  • 9–12 lasagna noodles (pre-cooked or no-boil)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven
    • Set oven to 180°C (350°F). Grease a 9×13-inch baking dish.
  2. Cook the filling
    • Heat olive oil in a large skillet. Sauté onion and garlic until translucent.
    • Add mushrooms, salt, pepper, and thyme; cook until mushrooms release their liquid and it evaporates.
    • Stir in spinach and cook until wilted (or heated through if using frozen). Remove from heat.
  3. Make the cheese sauce
    • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes.
    • Gradually whisk in milk until smooth. Cook, stirring, until thickened.
    • Add Parmesan, nutmeg, salt, and pepper. Remove from heat.
  4. Assemble the lasagna
    • Spread a thin layer of cheese sauce on the bottom of the baking dish.
    • Layer noodles, mushroom-spinach mixture, cheese sauce, and mozzarella. Repeat until all ingredients are used, finishing with mozzarella on top.
  5. Bake
    • Cover with foil and bake for 25 minutes. Remove foil and bake another 15–20 minutes until bubbly and golden on top.
  6. Rest and serve
    • Let the lasagna rest for 10 minutes before slicing to set the layers.

✅ Tips:

  • Add ricotta cheese between layers for extra creaminess.
  • Use a mix of mushrooms (button, cremini, shiitake) for deeper flavor.
  • Sprinkle extra Parmesan or breadcrumbs on top for a crispier finish.
