🍲 Chicken and Dumplings

🔹 Ingredients (serves 4–6)

Chicken & Broth:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt & pepper to taste
  • 2 tbsp butter or oil

Dumplings:

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp butter, cold and cubed
  • ¾ cup milk

🔹 Instructions

1. Cook the chicken

  • In a large pot, melt butter over medium heat
  • Sauté onion, garlic, carrots, and celery 3–4 minutes
  • Add chicken, chicken broth, thyme, bay leaf, salt, and pepper
  • Bring to a boil, then reduce to simmer 20–25 minutes until chicken is cooked

2. Shred chicken

  • Remove chicken, shred with forks, and return to the pot

3. Make dumplings

  • In a bowl, mix flour, baking powder, and salt
  • Cut in cold butter until mixture is crumbly
  • Stir in milk to form a soft dough

4. Cook dumplings

  • Drop spoonfuls of dough into simmering broth (do not stir)
  • Cover and cook 12–15 minutes until dumplings are puffed and cooked through

5. Serve

  • Remove bay leaf
  • Ladle chicken, dumplings, and veggies into bowls
  • Optional: garnish with chopped parsley

🔹 Tips

  • For extra creaminess, stir in ½ cup cream or milk into the broth before adding dumplings
  • You can add peas or corn for more color and flavor
  • Make dumplings smaller for quicker cooking or larger for a hearty bite
