🥞 Pancakes from Scratch

🔹 Ingredients (makes ~8 pancakes)

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

1. Mix dry ingredients

  • In a large bowl, whisk together flour, baking powder, salt, and sugar

2. Mix wet ingredients

  • In another bowl, whisk milk, egg, melted butter, and vanilla

3. Combine

  • Pour wet mixture into dry ingredients
  • Stir gently until just combined (small lumps are okay—do not overmix)

4. Cook pancakes

  • Heat a nonstick skillet or griddle over medium heat
  • Lightly butter the pan
  • Pour ~¼ cup batter per pancake
  • Cook until bubbles form on the surface (~2–3 min)
  • Flip and cook another 1–2 min until golden

5. Serve

  • Serve warm with syrup, fruit, or your favorite toppings

  • For extra fluffiness, separate the egg, whip the white until soft peaks, and fold in gently
  • Keep cooked pancakes warm in a 200°F (90°C) oven while finishing the batch
  • Add-ins: blueberries, chocolate chips, or bananas mix in after pouring batter onto the pan
